What Is Edible Glitter Made Of? Ingredients, Labels & FDA Rules

You are turning a jar of shimmer over, looking for the one line that would settle it: what is edible glitter actually made of?

On the counter is a cake for someone you love — probably a child who will eat the biggest slice.

Sometimes the ingredient list is right there. Sometimes the jar only says "non-toxic," and you are left doing the math on your own family's dessert.

That is a reasonable worry, and not a small corner of this market. In an analysis of roughly 2,400 category reviews, about one in ten negative comments raised the same concern: that the shimmer was not actually edible.

The short answer

Edible glitter is built on mica-based pearlescent pigment — titanium dioxide deposited on mica, often with iron oxide for color — plus certified FD&C colors in brighter shades. Other brands use a sugar, cornstarch or gum arabic base. An ingredient list is the first essential check: a jar labeled only "non-toxic" should not go on food. But a list alone is not proof — each color additive must also be permitted for that specific food.

Four families, seven substances. No flavorings, no preservatives, no fillers, nothing undeclared.

The part almost nobody spells out. Each additive carries its own permitted-use list, and they are not the same. Mica pigment is cleared for frostings and confections; synthetic iron oxide for a much narrower set of foods; titanium dioxide for foods generally up to 1%. So whether a finished product is authorized for your food depends on its formulation and intended use — not on the word "edible" alone. Ask which listing a supplier relies on, and expect a specific answer.

Other manufacturers use a different base entirely. The FDA notes that common ingredients also include sugar, acacia (gum arabic), maltodextrin and cornstarch — edible foods carrying color rather than mineral pigments.

The five-second label test

Worth memorizing, because it is the FDA's test, not anyone's marketing.

Products sold as edible must by law carry an ingredient list. Decorative shimmer need not.

So the FDA's guidance to bakers is blunt. If a label says only "non-toxic" or "for decorative purposes only," and gives you no ingredient list, that product should not go directly onto food.

Treat that as the first filter, not the last word. A list can still name a color additive that is not cleared for the food you are putting it on — the panel gets you past the obvious danger, not all the way to compliance.

The inversion most people miss. "Non-toxic" sounds like the reassuring word and "edible" sounds like the marketing one. It is the other way round. On a label, "non-toxic" promises not to poison you. "Edible" promises to be food.

The FDA lists the aliases it sells under: luster dust, disco dust, twinkle dust, sparkle dust, highlighter, shimmer powder, pearl dust, petal dust. The name on the jar tells you nothing.

The stakes are documented, not theoretical. The CDC reported that in 2018–19, Rhode Island and Missouri investigated metal poisonings traced to cakes decorated with luster dust — copper in the Rhode Island cases, an elevated blood lead level in a Missouri child. Its conclusion is the sentence worth keeping: labeling a product non-toxic does not imply it is safe to eat.

What the regulation permits, and how much

This is where most articles stop short. "FDA-listed" is not a blanket pass. The listing for mica-based pearlescent pigment is written food category by food category, each with its own ceiling.

Two things fall out. Frosting is named explicitly, at the highest permitted level — cake decorating is the use this rule most clearly contemplates. But the beverage side is narrower than "edible glitter for drinks" suggests: cocktails and cocktail mixers are named, while soft drinks, juices and wine are not.

Why "a little goes a long way" is not a slogan. These ceilings are a fraction of one percent of the finished drink, not a fixed amount per glass. At 0.07%, a 150 g cocktail allows about 0.105 g of mica pigment; a 100 g serve allows only 0.07 g. Our listings guide about 0.1 g, so weigh the drink rather than trusting one universal scoop.

The regulation also caps the pigment itself: lead no more than 4 ppm, arsenic 3 ppm, mercury 1 ppm. Those are the numbers to have in mind when you ask for documentation.

Why one brand's gold and white differ

Here is the honest part. The ingredient list follows the shade, not the brand — a bright opaque gold and a soft translucent white are different pigment systems, so their panels differ.

Two examples from our sheets. Iconic Gold glitter lists mica-based pigment at 85–100%, iron oxide up to 15% in some shades, no titanium dioxide. Gold luster dust is a different system: roughly half mica, with titanium dioxide and iron oxide making up the rest — brighter and more opaque, by design.

Our technical documentation describes that gold as titanium dioxide and iron oxide layered over a mica substrate. Our gold luster dust contains no metallic gold — the color comes from pearlescent pigment. (Genuine edible gold does exist as a separate product: gold leaf, sold by the sheet.)

Which raises the titanium dioxide question. US regulations permit it for foods generally, up to 1% by weight; the EU removed it from authorized food additives in 2022 — different conclusions, different frameworks. If a brand gives one ingredient answer for its whole color range, it is not reading its own paperwork. Ask about the shade in your hand.

Same ingredients, two particle sizes

Luster dust and edible glitter usually come from the same pigment family. What separates them is how finely it is milled — and that number decides which you should buy.

What those ingredients do on the cake

Our safety data sheets describe the powder as odorless, effectively insoluble in water, acid- and alkali-resistant, and chemically stable. Our listings describe the flavor as tasteless. In practice, four things follow.

Chemically stable, so in normal decorating it keeps its look — a cake you decorate tonight still looks decorated when it is cut tomorrow. Very long or hot bakes can vary.

Odorless and tasteless, so nothing you spent two days baking picks up a chalky aftertaste in the last five minutes.

Almost insoluble in water, so in a cocktail it stays visible and suspended instead of vanishing.

Who should skip edible glitter

If someone at your table reacts to a specific color additive, read that shade's panel and take it seriously — a translucent shade built on mica alone is very different from a bright red carrying FD&C Red 40. If you are selling into the EU, titanium dioxide is not permitted there as a food additive. And if what you want is color rather than shimmer, buy gel color: glitter is a light effect, and it will not make a pale frosting pink.

The ingredient list is the first difference: products sold as edible must declare what is inside, and decorative glitter need not. Craft glitter may contain plastics and metals never assessed for eating. If a jar says only "non-toxic" or "for decorative purposes only," it is not food.

Does edible glitter contain plastic or microplastics?

Mineral-pigment edible glitter like ours contains no plastic — it is mica, iron oxide, titanium dioxide and food colors. Craft and "disco dust" glitters are frequently plastic-based, which is exactly why they are not meant for food. Check the panel.

Does edible glitter have a taste?

No. Our listings describe it as tasteless and our safety data sheets record the powder as odorless. At normal amounts — roughly 0.1 g per drink — it adds no flavor, aroma or texture. Reviewers across the category report the same: sparkle with no taste.

Is titanium dioxide in edible glitter a problem?
